What we need:
2 long eggplants sliced
1 medium onion sliced
2 tbsp rice flour
1 tsp Chilli powder
4 green chillies slit
1 tsp corriander powder
1 tsp mustard seeds
1/4 tsp Hing
Salt to taste
Oil

How to cook:
1.Soak the sliced eggplant in water for 10 minutes.
2.Strain it and keep it aside.
3.Add salt , Chili powder and Hing to it. Let it marinate for 15 minutes.
4.Add the rice powder mix well till all the eggplant pieces get coated with rice flour.
5.Heat oil in a pan, fry the eggplant slices till they change color and become a little crisp.
6.In a pan heat 2 tbsp oil in a pan.
7.Add mustard seeds . When they splutter add green chilies and onions, cook till onions turn golden brown.
8.Add the Coriander powder and Chili powder and sauté for a minute or 2.
9.Add the fried eggplant and give it a good stir.
10.Add salt to taste and adjust spices.
11.Cover and cook for 5 minutes and it’s ready to be served.

●This goes well with rice and Dal, chappatis and especially with Dahi Rice.
